Beaver Dam Chili1 lb (3-6 chilis). A Hungarian immigrant family (Hussli) arrived in 1912 bringing pepper seeds to of all places, Beaver Dam, WI... and the Beaver Dam pepper was born. The beaver dam pepper is a large, meaty and very colorful pepper. It is rated 500-1000 Scoville units but the heat slowly builds and sticks around, making this pepper a great addition to a variety of spicy dishes. At the same time it has a sweetness similar to a sweet paprika. These contrasts make it very versatile flavor to be used in goulashes, soups and stews, stuffed or grilled, in eggs. They are a great pickling pepper, retaining their colors beautifully. The beaver dam pepper made The Ark of Taste list of regionally unique and endangered foods across the world that are in jeopardy of extinction. We’re doing our best to save this pepper and spread the word!
